Two weeks ago, my Chilean classmate, Soledad invited us to her house for lunch. She and her family live in a village called Cottenham. It is about 15 mins drive away from Cambridge town centre.

Empanadas is a kind of Chilean food. The concept is similar to our curry puff, except the ingredient and the shape. Inside these empadanas are stir fried minced beef and onions. The size is quite big. I can't finish eating one by myself and have to share it with WG.
These are empanadas in different shapes. Z from Bangladesh was helping Soledad to make empanadas. She made them into shapes like curry puff and samosa, different from the normal empandas. Because these were vegetarian empanadas; inside them were mushroom, corriander & cheese. We fried them instead of putting them into the oven. For me, I prefer the vegetarian empanadas. The taste of mushroom, corriander and melted cheese match perfectly well. May be next time, I can try putting these ingredients in our spring roll sheet and fry them. Another new recipe for our vegetarian spring roll!

Soledad and her family are moving back to Chile end of this month. They invited us to visit them in Chile. Chile is in South American and it is the longest country in the world! Soledad showed us a book that introduces Chile and we never know that Chile is such a beautiful country. Well, you never know, may be one day, we will meet each other again in Chile! ; )
