Mexican Chicken Fajita Wrap & Salsa Sauce 墨西哥鸡肉馅饼 番茄莎莎酱

You can easily buy packet of Fajita Seasoning Mix from supermarket, but if you read the ingredient, it is a packet full of artificial stuff! So, why not make your own Fajita Seasoning Mix and it is super easy!  

Fajita Seasoning  Mix
·   Just mix the following spices together in a bowl:    
        2 tbsp corn flour
·       4 tsp chilli powder (can cut down or increase depends on individual's taste)
·       2 tsp salt
·       2 tsp paprika
·       2 tsp sugar
·       1.5 tsp crushed chicken bouillon cube
·       1 tsp onion powder
·       0.5 tsp garlic powder
        0.5 tsp cayenne pepper
         0.5 tsp ground cumin
         0.5 tsp oregano
·       0.5 tsp black pepper
Tomato Salsa Sauce
·       A bit of ground nutmeg & ground cinnamon



Simple Tomato Salsa Sauce
-   - Two medium ripped tomatoes, finely chopped
-   - One bunch of coriander, finely chopped
-   - One medium ground onion, finely chopped
-   - Two cloves of garlic, finely chopped
-   - Two tbs of lemon juice
-   - One tbs of olive oil
-   - Salt & freshly ground black pepper to taste
-   - Just mix the above together in a bowl, wrap with cling film and let it sit in the fridge for at least 30 mins or a few hours before serving.

Mexican Chicken Fajita Wrap
-   - 400gm of Chicken breast or tight, sliced to strip (bite size)
-   - One large onion, sliced  
-   - One red pepper, sliced
-   - One yellow or orange pepper, sliced
-   -  Fajita Seasoning Mix (as above)

1)  Season the sliced chicken with Fajita Seasoning Mix for about 20 mins;
2)  Heat oil in sauce pan, first fry the sliced onion with middle heat, when it begin to get soften, stir in the chicken, continue to stir fry for a few minutes, then add the red and yellow pepper, stir fry until the pepper get soften, and it is done.


Wrap the Wrap (The most simple part!)

1)  Put a few tortilla wraps on plate and put in the microwave for 30 seconds and take it out.
2) Put all the ingredients in the middle of the tortilla wrap, namely, the chicken, some salads, salsa sauce and grated cheese. Wrap them up and eat!

Dried Scallop Braised Chinese Leaf 干贝扒大白菜


材料:
·       一个白菜(一片片剥开,洗净,大片的纵切成两半,使之成长条状)
·       干贝(大颗的3颗)
·       蒜茸
·       姜切丝
·       食油
·       高汤约350ml(我没自己煮高汤,只用调味料加水)
·       鸡蛋一个
·       料酒少许
·       蜀粉半汤匙(勾芡用)
·       酱油、其他调味料

做法:
·       1)将干贝泡软,泡过干贝的水可以加入高汤,干贝加些料酒,剥开成丝;
·      2) 倒少许食油入热锅,先加姜丝,再加蒜茸,稍微炒香;
·      3)加入干贝继续炒香,然后拿一半起来放在小碗备用;
·      4) 剩下的干贝留在锅内,加入高汤,加一些蜀粉勾芡;
·       将蛋打入高汤,搅拌均匀,再加些酱油或盐调味;
·      5) 用沸水汆汤白菜,约两分钟,然后将白菜取出,放在盘子上;
·      6)将高汤淋在白菜上面,撒上先前拿起一半的干贝即可上桌。

白菜干花生排骨粥

这粥有下火清热的功效。

材料:
             白米100
             白菜干100
             花生65
             猪骨500
             姜二片
             1500毫升
             盐适量
             鸡粉适量(optional)

准备工作:
1)将白菜干浸泡软,清洗干净,切小段备用;
2)猪骨提前用盐腌好,放入冰箱腌一个晚上;
3)米洗净用盐和油腌约30分钟(也可以放入冰冻格腌一个晚上);
4)花生浸泡半小时(也可以浸泡隔夜,浸泡久一些花生会比较软);

做法:
1)汤锅加入水1000豪毫升,加入姜片;
2)将猪骨用沸水烫过(飞水)并洗净,将咸猪骨加入水煲开后改用中火半小时;
 3)加入菜干和花生再煲半小时 (我懒惰,所以把咸猪骨、菜干和花生统统一起煮);
4) 加入米再煲一小时(要不时搅拌一下);
5)熄火放入盐和鸡粉之类的调味料就完成了

注:较后才加入米比较不会粘锅。

Nov ‘13 Discussion Mtg

We have such wonderful meeting today,although we have a few people who could not come as there are down with cold. Nevertheless, we have 18 attendance, including 5 guests! Also, out of the 18, 8 of them are youth (first time we have so many youth!) Also, thks Barry who came just to take photo for us. Just as the theme of today meeting, let's continue to create many victories in our life & never be defeated! :)

Honey Lemon Apple Tea 蜂蜜柠檬苹果汤



材料:四个苹果、蜂蜜些许、柠檬汁些许

做法: 
1)将四个苹果去核、切大块放入汤锅内加清水(刚好盖过苹果),用大火煮滚一滚就熄火,待凉;

注:避免用金属的茶匙,因为它会让蜂蜜氧化,另外加入蜂蜜后最好在两小时内喝,因为加水后的蜂蜜也会逐渐氧化,使之原有的失去功效。





         

酿茄子


酿茄子

肉馅:
将些许盐、蚝油(或鸡粉之类的调味料)、麻油、酱油、葱花、姜末放入约120-150克猪肉碎以同一个方向搅拌均匀,再打个蛋继续搅拌,直到用筷子夹起肉碎,肉碎不会从筷子上掉下来。

茄子: 
-横切,第一刀不切短,第二刀切断,这样一片茄子中间就有空间可以夹肉馅;重复切完整个茄子。
-把肉馅全部酿入所有茄子。

做法:
-拿个锅,如有切坏的茄子,把它铺在锅底,再把酿好的茄子放入锅内,记得肉馅的开口要向上摆;
-加入一碗清水(水到茄子的一半就行了,不然会太多水),加入些许蚝油、盐、糖、酱油、葱段,加盖用中火煮15分钟。(煮过久茄子会变得太软,夹的时候肉会散开);
-开盖,加入蒜茸、淀粉水勾芡,撒些葱花即可上桌。

咸饭(有味饭)

介绍给忙碌的妈妈们这道简单又好吃的一锅煮,除了少许麻油,它完全不用油,不用煎也不用炒。如果要增加营养,也可以把白米换成糙米,或白米和糙米参半。

四个人份量:

1. 150克鸡肉(或猪肉)切薄片,先用一汤匙生抽、半汤匙老抽、一汤匙蚝油、一汤匙米酒、一茶匙麻油、三片姜、少许蜀粉、少许胡椒粉腌约20分钟(也可以提早几个小时腌,不过要放入冰箱)

2. 虾米一把,稍微洗过后再用水泡一泡。

3. 香菇几片,用开水泡了,切片待用。

4. 把米洗净放进电饭锅里,加水(平时煮饭的分量),和腌过的鸡肉片、虾米、香菇,三瓣蒜头(打扁)、再加两颗八角、喜欢的话也可以加些腊肠(切片),统统搅拌均匀,再开电饭锅的开关。

5. 等开关跳了,别急着开盖,再过10分钟才打开锅盖,把饭搅拌均匀,就可以吃了。

6. 吃的时候,可以看个人口味再来调味, 如果觉得不够咸,可以撒些食盐,也可以撒些黑胡椒粉或炸葱头之类的,增加风味。

7.另外,提醒一下,吃的时候,要把八角挑出来(尤其是小孩要特别注意)。

我没蟹柳,用虾肉代替。另外,我用了三个蛋(其它材料份量不变)做大约三个人的份量。

Homemade Tartar Sauce

Healthy 'tartar sauce' made with Greek yogurt - just finely chop cucumber, coriander, mint, onion and celery, add all of them and mix well with Greek yogurt (or normal original yogurt), then add lemon juice, abit of salt, pepper, caster sugar to taste. 
PS: Mint, onion and celery are optional

麦当劳鱼柳包的tartar sauce主要是用mayonaise做的,油多脂肪高。而这个自制tartar sauce很健康,做法和材料也很简单:将黄瓜、香菜、薄荷叶、西芹、洋葱统统切碎,放入greek yogut (或普通的原味yogurt), 再加入些许柠檬汁、盐、黑胡椒粉、幼糖搅拌均匀就行了。如果不喜欢薄荷叶、西芹和洋葱也可以不放。


Planting

Today we planted some 50 daffodils, 85 tulips, 30 crocus, 20 iris & 8 alliums in the garden. After that, we enjoyed a bowl of black sesame dumpling with ginger tea.

今天我们种了50株水仙、85株郁金香、30株藏红花、20株鸢尾花和8株葱属。明年2月开始一直到9月我们的花园都会有花开。:)劳动过后,我们吃黑芝麻汤圆桂圆姜汤慰劳自己一下。

琵琶豆腐 Minced Meat Tofu



材料:豆腐、猪肉碎、虾(剁碎)、香菇米、香菜(或青葱)切碎、太白粉、胡椒粉、蚝油、麻油,鸡粉、酱油、盐、蛋 

1.    捣烂豆腐,加入猪肉碎,虾碎、蓉、香菇米,香菜(或青葱)搅拌均匀;

2.    加少许太白粉、胡椒粉、蚝油、麻油,鸡粉、酱油、盐搅拌。

3.    加入一个鸡蛋拌和,放入抹了油的瓦匙羹,满至柄端,使成一面琵琶状。

4.    以慢火蒸十分钟,用薄竹签小心挑拨取出,把两面煎得金黄便可。
