Asparagus with Fried Garlic Oil 香蒜油拌芦笋

材料:
-芦笋一把约250克 Asparagus 250g
-香蒜油*两茶匙 
     Fried garlic oil* 2 tsp
-酱青一茶匙 Soy sauce 1 tsp
-麻油一茶匙 Sesame oil 1tsp
-蚝油一茶匙 Oyster sauce 1 tsp
-盐少许 Little bit salt  

做法:

  1. 芦笋洗净、切段(约4公分长)Wash and cut asparagus into appx 4 cm.
  2. 将所有调味料:香蒜油、酱青、麻油、蚝油、盐,放入碗内搅拌均匀。所有调味料都可以凭个人喜好加减。Place all seasonings into a bowl and mix them well. 
  3. 煮一锅水,水沸后才加入芦笋烫两分钟(烫太久芦笋会变黄营养流失),将芦笋捞起沥干,倒入碗内和调味料一起搅拌就可以了。Blanched the asparagus in boiling water only for 2 mins, drained it and mixed it well with the seasonings, that it's!  
*香蒜油:将蒜茸用热油爆香至金黄色就可以了。我通常一次过做一小碗香蒜油,收着可以用两个星期左右,非常方便。

*Fried garlic oil: Fried minced garlic in hot oil until it turns golden brown (be careful not to burn it). I normally make a small bowl of fried garlic oil and keep it for about two weeks.

Pickled Lettuce Braised Minced Pork




材料:


  • 罐头菜心 - 1 罐(将罐头的水倒掉)
  • 猪肉碎 - 120克左右
  • 食油 - 两汤匙
  • 麻油-  一茶匙
  • 蒜茸 - 1汤匙
  • 胡椒粉少许
  • 酱青一汤匙
  • 黑酱油一汤匙
  • 清水两汤匙
  • 香菜或青葱(点缀用)





做法:
  • 将一汤匙食油、一汤匙酱青、胡椒粉、清水加入猪肉碎搅拌均匀待用。(我妈说加入食油和清水调过的猪肉碎煮后比较不会变硬)
  • 将一汤匙食油和麻油倒入热锅,加入蒜茸稍微爆香,加入调味过猪肉碎炒香。
  • 等猪肉开始煮熟,再加入罐头菜心继续炒。
  • 最后加入黑酱油炒一会儿,就可以盛盘了,最后撒些香菜或青葱就可以上桌了。

Spicy Achovy with Onion 香辣洋葱江鱼仔




·       
       Ingredients 材料: 
        -   Two large onions, sliced 两个大葱切条状
·      -  A few garlic cloves, smashed 几个蒜头拍扁
·      -  A few Purple shallots, smashed  几粒小红葱拍扁
·      -  One green chilli and red chilli   青红辣椒各1条搅烂
    -  Roasted peanuts (optional) 炒过的花生一小把
·      -  A handful of achovy 一把江鱼仔洗净备用

      Direction 做法:
·      -   Fried achovy with hot oil, until it turns golden, remove from pan.  热油,下江鱼仔爆香捞起江鱼在备用
·      -  Fried garlics, purple shallots, onions and chilli using the remaining oil in the pan, until onions turn soften  后放入其它材料,翻炒至洋葱变软。

·      - Add fried achovy and mixed them well, add some black soy sauce, sugar to taste. 加入炒过的江鱼仔和炒过花生(optional)一起拌匀加些黑酱油和白糖如果太辣就再加些糖就可以上桌了。

July 2013 Disc Mtg - 'On Courage'

It was so nice to hv such courageous young musician to perform for us in our disc mtg today! 

Also, we have a wonderful discussion & sharing of experiences on how our buddhist practise gives us courage. We began the mtg with everyone sharing what comes to their mind when talking about courage, below were some of the sharing:
Courage is:
  • - to take action
  • - to persevere
  • - to have hope
  • - a necessity
  • - to stand alone
  • - to do what is needed even if one is afraid
  • - one step closer to my dream
  • - to hv conviction
  • - not to give up
  • - Buddhahood

文光去年种的薰衣草盛开了!好香!好美!等夏天过了,可以把薰衣草剪下来放在枕头下面还是做个香包;或者上网看看薰衣草可以做什么菜。

Braised Tofu 申江豆腐 

在家我妈常煮这道菜,现在才知道它叫申江豆腐。据说在5060年代,这可是道名菜哦。想想在物资缺乏的年代里,这道有虾有肉又有青菜的菜肴,一定相当受欢迎。

 


材料:
·       一块豆腐 (切片,沾上适量玉米粉,放入热油里煎至金黄色,捞起备用)
·       100 肉块或肉碎(肉块切片,与生抽,玉米粉和油各少许拌均,腌10分钟)
·       150 虾仁 (去壳、去肠)
·       5 香菇 (泡水至软,去蒂切片,挤干水份)
·       1 青葱(切段)
·       1 1/2碗水
·       6-10 荷兰豆 (去丝)
·       2 -3 公分胡萝卜(切片)

调味料:
·     蚝油  1/2 汤匙 1 小匙 1/4 小匙 胡椒粉和麻油适量

做法:
1】烧热适量的食油,爆香青葱。加入水,虾、肉、豆腐、香菇和调味料拌均,焖香至剩余适量汁液,加入荷兰豆和红萝卜炒片刻。
2】打散半个鸡蛋液加入菜肴中,熄火,拌炒均匀即可。

#豆腐可以随个人喜好的切法【块/角】。
#鸡蛋可以随喜,不喜欢可以不加。

#肉类可以自行选择,比如烧肉,叉烧,鱼片等等食材。

Japanese Sesame Sauce 日式芝麻酱

Homemake Japanese Sesame Sauce - So proud of myself! Ha ha!

超喜欢Mizkan牌子的芝麻酱,可是日货越卖越贵,有时还不一定买得到呢,就曾经去过纳福坊的Coldstorage三次都买不到!现在自己研发出它的食谱,芝麻的味道比买的更香喔,而且肯定没有防腐剂!嘻嘻,觉得自己还蛮厉害一下的!


日式芝麻酱

1)Roast 50g of sesame seeds til it turns golden brown.

2)   Blend sesame seeds in blender or food processor. 

3)   Add 5 tbs rice vinegar, 5 tbs of cooking oil, 2 tbs sugar or honey, 4 tbsp salt, 5 tbs water and continue to blend.

4)  Put in bottle and store in the fridge.

Remarks: Do not store in the fridge for too long, perhaps not more than 2 weeks.
