Mexican Chicken Fajita Wrap & Salsa Sauce 墨西哥鸡肉馅饼 番茄莎莎酱

You can easily buy packet of Fajita Seasoning Mix from supermarket, but if you read the ingredient, it is a packet full of artificial stuff! So, why not make your own Fajita Seasoning Mix and it is super easy!  

Fajita Seasoning  Mix
·   Just mix the following spices together in a bowl:    
        2 tbsp corn flour
·       4 tsp chilli powder (can cut down or increase depends on individual's taste)
·       2 tsp salt
·       2 tsp paprika
·       2 tsp sugar
·       1.5 tsp crushed chicken bouillon cube
·       1 tsp onion powder
·       0.5 tsp garlic powder
        0.5 tsp cayenne pepper
         0.5 tsp ground cumin
         0.5 tsp oregano
·       0.5 tsp black pepper
Tomato Salsa Sauce
·       A bit of ground nutmeg & ground cinnamon



Simple Tomato Salsa Sauce
-   - Two medium ripped tomatoes, finely chopped
-   - One bunch of coriander, finely chopped
-   - One medium ground onion, finely chopped
-   - Two cloves of garlic, finely chopped
-   - Two tbs of lemon juice
-   - One tbs of olive oil
-   - Salt & freshly ground black pepper to taste
-   - Just mix the above together in a bowl, wrap with cling film and let it sit in the fridge for at least 30 mins or a few hours before serving.

Mexican Chicken Fajita Wrap
-   - 400gm of Chicken breast or tight, sliced to strip (bite size)
-   - One large onion, sliced  
-   - One red pepper, sliced
-   - One yellow or orange pepper, sliced
-   -  Fajita Seasoning Mix (as above)

1)  Season the sliced chicken with Fajita Seasoning Mix for about 20 mins;
2)  Heat oil in sauce pan, first fry the sliced onion with middle heat, when it begin to get soften, stir in the chicken, continue to stir fry for a few minutes, then add the red and yellow pepper, stir fry until the pepper get soften, and it is done.


Wrap the Wrap (The most simple part!)

1)  Put a few tortilla wraps on plate and put in the microwave for 30 seconds and take it out.
2) Put all the ingredients in the middle of the tortilla wrap, namely, the chicken, some salads, salsa sauce and grated cheese. Wrap them up and eat!
